What You Need (ingredients)

Bourbon Dijon Tenderloin

  • ⅓ cup bourbon
  • 1 tbsp dijon mustard
  • 1 tbsp honey
  • 1 tbsp Emeril’s Essence
  • 1½ lb tenderloin piece, cut into 1 inch slices
  • 1 tbsp olive oil.

Salad

  • 1 butter lettuce
  • 4 cocktail tomatoes, sliced in quarters
  • ½ cup bocconcini, sliced
  • 5 green onions, chopped
  • 2 tbsp olive oil
  • 1 tbsp vinegar
  • salt and pepper to taste

What To Do (directions)

Mix all the marinade ingredients together, so the bourbon, dijon mustard, honey and the essence. Whisk well then add the pork slices to the marinade and toss so that each piece of pork has some of the marinade on it. Cover with plastic wrap and refrigerate for at least 2 hours. To make the salad, chop up the lettuce, and add to a bowl. Add the sliced tomatoes, green onions and bocconcini. Do not add the olive oil and vinegar just yet. In a skillet heat up 1 tbsp of olive oil over medium heat. Add the meat to the skillet, searing each side until the meat is browned, then turn over and sear on the other side. Add the olive oil, vinegar, salt and pepper to the salad and toss.
