Watermelon Sherbet

These days we are forever craving something refreshing! I think we all can agree that watermelon is the ultimate thirst quencher. We got a little creative and created a fresh, healthy treat. With only 2 simple ingredients, we are sure you’re gonna be a huge fan of this Watermelon Sherbet this summer as well!

What you will need:

-Fresh watermelon (we only used half a watermelon)

-Vanilla yogurt (1 cup per watermelon half)

-Fresh mint leaves to garnish or even blend into the mix– your choice!

-Cut watermelon into medium sized cubes

-Place on baking sheet covered with parchment paper or aluminum foil to prevent sticking

-Let watermelon cubes freeze for 4+ hours or overnight. You want these frozen solid.

-Once frozen, place 1/2 of your watermelon cubes into blender. We are going to do this in two different sections.

-Blend until the watermelon becomes grainy. Next, add 1/2 cup of yogurt.

-Blend until creamy. Scoop the sherbet into a separate bowl.

-Repeat the same steps for the second batch.

-Serve immediately.
